Pesto linguini with garlic toast 

Everyone is fond of pasta and generally avoid it as an unhealthy option. So here is the healthiest option for you all with rich in iron and vitamins.Dish for two people.

Ingredients:

  1. 200gms spinach
  2. 3-4 Basil leaves (optional)
  3. 1 tbs pine nuts or walnuts slightly dry roasted in pan.
  4. 1 diced tomatoe 
  5. 5-6 cloves of garlic
  6. 4tbs olive oil
  7. Grated Parmesan  cheese 
  8. Salt and blackpepper to taste
  9. Red chilli flakes
  10. Italian seasoning .
  11. 50gm of wheat linguini or penne pasta

Method:

  • First take a vessel and boil pasta in ample water with 1tbs of oil and salt for 12 mins till al Dante.
  • Now combine spinach,garlic, basil,tomatoes and roasted pinenuts  with half cup of water in blender or food processor and pulse till it gets paste like. Then add 4tbs oilive oil ,salt,chilli flakes and blend again.
  • Now take an non stick pan and put 2-3 spoons of the pesto paste from the blender and cook it on medium heat for 2-3 mins and then mix the pasta as per your need and sprinkle Italian seasoning and blackpepper to it.
